GLUTEN-FREE BLUEBERRY CRUMBLE PROTEIN BREAD

Gluten-Free Blueberry Crumble Protein Bread

INGREDIENTS

2 containers (14 ounces) Greek yogurt⠀
3 eggs⠀
1/2 cup coconut sugar⠀
2 tbsp. vanilla extract⠀
2 cup Bob’s Red Mill Grain-Free PALEO Baking Flour
1 1/2 scoops UNBOWED Blueberry Cake Batter Protein
4 teaspoons baking powder⠀
1/4 tsp salt⠀
1/2 tsp of cinnamon⠀
2 cups blueberries⠀

For the Crumble:

1/2 cup coconut sugar⠀
1/2 cup PALEO Baking Flour (listed above)⠀
3 tablespoons salted butter softened⠀

Directions⠀

Preheat oven to 350 degrees⠀
In a large bowl, whisk together Greek yogurt, eggs, coconut sugar, and vanilla extract until completely combined.

Then sift together flour, UNBOWED protein, baking powder, salt, and cinnamon.

Once sifted, add to the large bowl with the Greek yogurt mixture. Use a spatula to mix until completely and smooth then fold in blueberries.

Pour the bread batter into a greased and floured 9"x 5" bread pan.

Make the crumble by mixing together the flour, coconut sugar and butter in a small bowl. This mixture will be crumbly.

Spread the crumbs on top of the bread batter in the pan.

Bake at 350 degrees for 55-60 minutes. A toothpick inserted in the center of the bread should come out clean.

Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.⠀

Store at room temperature in an airtight container⠀

Serves 12⠀
