BLUEBERRY CAKE BATTER PROTEIN PANCAKES

Who doesn't love pancakes?!

Makes: 8 small pancakes

Ingredients

1 Tbsp melted coconut oil
1 Egg
3/4 cup Water

Directions

Mix all ingredients together in a bowl until just combined and pour 1/4 cup portions of the batter onto a hot griddle or pan. Cook until bubbly, then flip and cook until browned or cooked through. About 2-3 minutes each side.  
Top with fresh berries of choice, peanuts, and pure maple syrup and enjoy!
